Italian Sausage and Spinach Pie

This is one of my new favorite recipes-so easy, yet it looks like you spent all day in the kitchen! Pair it with an Italian dressing-tossed green salad and buttered garlic bread for a complete Italian meal.
Italian Sausage and Spinach Pie

1 lb bulk Italian sausage

1/2 cup chopped onion

5 eggs

1 egg white

1 10-ounce pkg frozen chopped spinach, thawed and well drained

2 cups shredded mozzarella cheese (8 ounces)

1/2 of a 15 ounce carton part-skim ricotta cheese (about 1 cup)

1/2 teaspoon garlic powder

Pastry for a double crust 9 or 10 inch pie

1 egg yolk

1 tablespoon water

1. In a large skillet cook sausage and onion over medium heat until sausage is brown and onion is tender;drain. Set aside.

2.In a large bowl whisk together the whole eggs and 1 egg white. Stir in spinach, mozzarella cheese, ricotta cheese, garlic powder, and sausage mixture.

3.Divide the pastry in half. Line an ungreased 9 or 10 inch pie plate with one pastry circle. Transfer sausage mixture to the pastry lined pie plate. Trim pastry to edge of pie plate. Cut slits in remaining pastry circle. Place on filling. Trim to 1/2 inch beyond edge of plate. Fold top pastry under bottom pastry. Crimp edge as desired. In a small bowl whisk together egg yolk and the water. Brush top of pastry with egg yolk mixture.

4.Bake at 375 for 50-55 minutes or until top is golden. Cover the edges with foil, if necessary, to prevent overbrowning. let stand for 10 minutes before serving.

* I think I will add mushrooms or artichokes next time!

Cut into wedges and ENJOY!

Daddy Daughter Date Night

Brian and Annabelle attended their 1st Daddy Daughter Date night last Thursday and had a blast! This is an event sponsored by the City of Auburn for girls up to the age of 12 and their daddies. It takes place around Valentines Day each year. It is a real big deal-I mean I got the tickets back in December! The event is complete with a DJ, yummy snacks, and even a professional photographer-for the "prom" like pictures! No Mommies are allowed in, but you can check out Ali's blog for a few pictures she was able to capture-she works for the city-they are too cute! Brian did take the camera and I was so proud of the pictures he took......Enjoy!

Brian took Annabelle to the park this weekend. They had a great time playing chase, swinging, and sliding. Brian (being the great husband that he is) took some pictures for me (I was in the bed sick) to see when they got back. The pictures are so cute and thanks so much to Mrs. Amanda for the cute shirt. It is a felt Rudolph made from a tracing of Annabelle's foot and her hands.

I am a little under the weather today and am taking it easy! Brian is at the park with Annabelle and I am going through old pictures. I came across these from last years Christmas album and thought I would post a few of them!

December really has went by in a flash! It seems like just yesterday I was thinking to myself,"I really should post the pictures from Thanksgiving.......", and we see that I still have not done that! We have been really busy! I love the holiday season and it is so much fun with sweet Annabelle, but I feel as if I can never get it all done! I have to take time each day to tell myself to slow down and just enjoy the season-but that is so easy to say and so hard to live! Today is the last day of school until next year. Most of you know that Brian and I both teach elementary school, so we get a great, well deserved two week break. I am very excited about spending time with family and friends. I have not even started shopping! I have so much to do and only 7 days to get it done(I have made a list-lets just hope all my ideas pan out)! I did get my Christmas cards out this year-Yeah! Last year I had to send New Years cards due to my procrastination. I am going to share some pictures of December and of Thanksgiving since I have failed to do so......

I want to take just a minute to admit-I AM A BLOG STALKER! I have a couple (just 3) of blogs that I check often-but no, I do not know these people! So that makes me a stalker! There is one blog in particular that teaches me so many cute ideas! This lady is super-woman! Not only does she have time to do all this stuff-but she also shares with the world! I love it! Thanks so much, Darby! She has taught me how to make eyelet socks, bows, appliqued shirts and her newest trick-labels! Summer and I decided that we would have a craft night once a month-since the hubby's have decided that they need to go camping once a month! Here is a picture of the shirt I made Annabelle using her tutorial for appliques. Summer also made Winsley a cute turkey shirt and some dish towels. The possibilities are endless!

Thanksgiving 2008 I made these cute little pilgrim hats for Annabelle's friends at Mrs.Amanda's house and for the 1st grade feast. They were a hit with the kids and so easy!

Our December "craft night" turned into a night out! We got a sitter and went out for a great dinner and some downtown fun! I always have such a great time with these gals! A randomn little Elf jumped in our picture!

Annabelle went to a great cookie decorating party hosted by the Galimore's. She really enjoyed herself and has been asking for "cookties" ever since. Thanks Jenny for a great afternoon-you are such a fun and crafty mommy!I wish I had more pictures-BUT, I had my hands full!

"Ball, ball, ball,....."Annabelle and I

AB went to her first Auburn game last weekend. It was a pretty good game even though we did not pull out the win! I braved taking her alone since Brian was not able to go with us. She had a great time and lasted through half time. She enjoyed watching the Georgia band and pointing on the field as she said "ball" over and over again. I think the most fun she had though was running around the stadium concourse when we took a bathroom break! She was so tired of sitting still! Trying to keep her still during the game was difficult! She sat in my lap and wiggled and kicked the poor man in front of us at least a thousand times! It was so crowded in our section! Maybe next year will be a little easier! WAR EAGLE!

WHAT'S FOR DINNER?

Chicken Spinach Lasagna

16 lasagna noodles, cooked
1 (10 oz) pkg. frozen chopped spinach, thawed and drained well
4 cups diced chicken (I use the herb flavored rotisserie chicken from the deli)
4 cups shredded cheddar
2/3 cup finely diced onion
1/2 tsp nutmeg
2 Tbsp flour
1 tsp salt
1/2 tsp pepper
2 Tbsp soy sauce
2 cans cream of mushroom
16 oz. sour cream
2/3 cup mayonnaise

Topping:
2 cups grated parmesan
4 Tbsp butter
2 cups chopped pecans (If you don't like nuts you can use mozzarella cheese. Just be sure to cover with foil when you bake so cheese does not burn.)

Combine all ingredients except noodles in very large bowl. In a large and deep baking dish, layer chicken mixture, noodles, chicken, noodles, chicken. Sprinkle with parmesan cheese. Melt butter in skillet, add chopped pecans to lightly toast. Sprinkle over cheese. Bake for 1 hour at 350 degrees.

Will make: 1 9x13 dish and an 8x8 dish-Freezes Well!

We stopped by to see Papa Lee on our way home from the beach on Sunday and Annabelle had a great time getting into everything in sight! Papa Lee is a very proud Veteran of World War II. His goal is to be the oldest living WWII Veteran in Dale County. I hope all of his dreams come true! My Papa and I have always been very close and it is so sweet to see him building a relationship with Annabelle. I wish Grandma "Annie" (short for Annabelle) was here to join in on the fun! Happy Veteran's Day, Papa! We love you and are so thankful for what you did for our country!

I found this cute pumpkin craft on the Family Fun website and actually made them last night! I filled mine with goldfish, teddy grahams, and candy corn since toddlers are going to be eating them! It only took me an hour to make 30 pumpkins-Brian even helped with the pipe cleaners! Hope everyone has a great time trick-or-treating tonight!

Why did I stop blogging? I have heard that a LOT lately! WELL, what had happened was:

I went to the beach with some great friends the weekend after that "zoo" post on July 15-(yes, I know that was 3 whole months ago) and ended up in the hospital! Then my mom had to come get me and I ended up having surgery in Auburn that Wednesday! After a 2 week recovery, it was time to start back to work! THE SUMMER IS OVER AND NOW IT IS ALMOST NOVEMBER-WHERE DID THOSE MONTHS GO? So much has happened! Brian and I both went back to work, its so hard to go from a "stay-at-home" family to an "all working" family-overnight! I love my new position at Richland Elementary! It is such a great school with such a positive environment! But, it has also kept me really busy this first 9 weeks! Lesson planning, IEP meetings out the wazooo, parent conferences, the new reading series, and report cards-I could just go on and on, but I won't! I will share some pictures of the past few months! And hopefully I finally have my head above water and will become a more "regular" blogger!

I also lost my Great-Grandmother since I last posted......

She passed away soon after this picture was taken in August. I drove to Huntsville to visit her on a Saturday and drove back that night, but I will forever be grateful to my sweet husband for encouraging me to take that trip! I was able to spend a wonderful afternoon with her before she became too ill. She was a remarkable woman and I miss her dearly!

I know you want to see Annabelle, so I am downloading pictures now for that post! Maybe it won't take me 3 months!

Date to the Zoo

Last Wednesday, we took Annabelle and her sweet buddy, Brooks to the zoo. On our way to Montgomery, Brian and I look in the back and this is what we saw:

I can assure you that they did this all on their own! This was not a "posed" photo shot-but what a sweet picture! Whenever Brooks would take his hand away, Annabelle would reach her hand out and make all kinds of noises in order to get his attention because she did not want him to let go! We figure if we start taking her on her "dates" now then she will ALWAYS want us to take her!

We had a fun and HOT day at the zoo. Annabelle loved looking at all of the animals and having the company of Brooks. She loves being around other children and has a mild obsession with 4 legged animals so this was her kind of date!

One Year Visit

Annabelle had her 12 month doctors visit this week (a little late) and she got a great report! She is 22 lbs 11 oz and 31 1/4 long. She has grown so much and continues to be "tall" for her age. I am so happy she is going to get her Daddy's height and curls! Her hair is so curly these days!

The Circus Came to Town!

Happy Birthday Winsley! One of Annabelle's best buddies had a wonderful circus party last week! Annabelle had such a great time and I must admit Brian and I had a blast as well. Summer (aka:Winsley's mom) had all sorts of little games set up for the kids to enjoy and win prizes. Annabelle really enoyed the duck pond and by the end of the party she was IN the duck pond! She also got to see a clown for the first time and she really did not know what to say or do-speechless! There was also hot popcorn, roasted peanuts, hot dogs, and yummy cupcakes for all to enjoy! Summer-you really should be a party planner AND get a blog!

Fourth of July

I am a little late with this post but we have been so busy this past week! We had a great 4th-we watched fireworks in Opelika and Auburn, had a great time with friends at Corey and Karri's, and spent the weekend at the lake with my parents! Annabelle was a little scared of the fireworks in Opelika on Thursday night and did not really care about them but seemed to enjoy them more on Friday in Auburn. She was up late on both nights so we decided to "drop" the bottle since she feel asleep in the car on the way home from both events. She has not had a bottle since-YEAH!

A Day at the Lake

Our wonderful friends; The Reid's invited us to join them for a day at the lake yesterday. It was a beautiful day except for the small 30 minute storm and we had a wonderful time! It was Annabelle's first boat ride and she really had a ball! Annabelle LOVES dogs and Abby, the Reid's golden retriever, also came along for the ride which kept Annabelle occupied most of the time. She also enjoyed playing with Brooks, relaxing in the lake, watching the water sports, and just cruising the lake. We ended the day with a wonderful dinner at Oskar's and can't wait to return next weekend!

Today is Annabelle's 1st Birthday! We are so proud of her and thank God daily for trusting us with such a precious gift! We had Annabelle's party last weekend at my parents house-THANKS, Nana and Poppy for EVERYTHING! Annabelle had a great time swimming in the baby pool, playing on the slip and slide, riding the Gator, and playing with her cousins! She really enjoyed her cake and the cupcakes were delicious-Thanks to Aunt Brandy! It was such a special event and we are so thankful that we were able to celebrate with family!

Well, school is out for summer(as of this past Monday-I am a little late with this post)! Brian and I will be home with Annabelle for 9 weeks! We are so excited and have already enjoyed this week! Annabelle is into EVERYTHING these days, so that keeps us on our toes~but we are lovin' every minute! We have been busy getting ready for our upcoming week. We are going on vacation with my parents to Fairhope, AL next week and when we return we are having Annabelle's 1st birthday party on the 7th! I have been planning for a couple of months so I am super excited and really hope that it all comes together! I am also sad~I CAN NOT believe that she is going to be ONE! This has been a GREAT year for our family and we are so blessed! But it FLEW by!

I will be out of the "blogging" world for a week or so-we will be relaxing with family and having a party! I will return soon with lots of pictures! Until then, check out these pictures of the place we will be staying next week! WOW!

I know what you are thinking (for those of you still reading)-finally she has something new to post! I really have had the best of intentions but have been so busy this month! And boy, has this month flown by! I can not believe I only have 3 more days of school left! I have so much to do!! As most of you guys know I am changing schools(from Cary Woods to Richland) and positions(from self-contained multiple disabilities to resource teacher) next year. It is so bittersweet for me, I love Cary Woods Elementary and have taught there for 4 years and made many memories, but I am also ready for a new chapter in my career!
Brian and I both are very excited about spending the next 2 months with Annabelle. We have a few mini-vacations planned and can't wait to just enjoy the summer together. I am planning Annabelle's birthday party as we speak and just can not believe how fast this year has flown by! She is such a sweet little girl! Brian and I have been so blessed this year!
Just a little bit of what we have been up to since the last post:

Sewing 101-This is my first sewing project-I think it turned out great! I hope to start sewing more this summer!

We celebrated Poppy and Papa's Birthday

I went to my first Corks and Canvas class-Thanks Holly! This is a lot of fun and I am sure I will go back soon. I am not so sure that I am an artist but I had the picture framed for my Mom and she loved it!

Spending time with cousin Blade! Blade is my first nephew and he is exactly 3 months younger than Annabelle.

We have been so busy lately and I have a lot of fun stuff to share but today I wanted to ask you for your prayers. My Great-Grandmother Coulter has been diagnosed with stomach cancer and is undergoing radiation treatments. Please lift her up in your prayers. We went to visit her in Huntsville a couple of weekends ago and she seems to be in great spirits and has a very positive outlook! I have been so blessed to have so many loving Grandmothers! Annabelle is so lucky to have 4 grandmothers(3 from my side of the family are shown below) that all love her so much!

It was spring quarter my freshman year in college. I was attending Wallace Community College and still living at home in Ozark. I was ready to get out of small town America! So I applied to Auburn University, found a roommate, and moved to Auburn that summer. I was so excited to be in Auburn-with a major in poultry science-YEAH-poultry science! What was I thinking-oh, I wasn't thinking! That was the time in my life when I did not have to think-no bills,no job, just living the college life!WOW!I can not believe it has been 10 years~I sometimes miss those care free days!

1.Finish the laundry-Does it EVER get finished?
2.Find a good brownie recipe and go get ingredients-bake sale this weekend at Kids Clothes Connection benefiting the Domestic Violence Center of Lee County.
3.Start reading Eckhart Tolle's book-A New Earth~Awakening to Your Life's Purpose.I bought the book yesterday and can't wait to get started!
4.Stay awake to watch The Hill's! It doesn't start till 9! I am usually in the bed fast asleep by 8:30!
5.Put roast in slow cooker for tomorrow.

Today was such a wonderful day! Brian and I went to church this morning and left Annabelle in the nursery for the first time. She did great of course. I was worried though since her nap is usually from 10:30-1 and it was 10:30. I just asked the ladies to lay her in the crib and she should fall right to sleep. Well, when the service was over and we returned she was all smiles and enjoying her friends-but did not nap! They said she just stood up in the crib and smiled. We went to eat at Outback and she napped until our food came-of course! So she ate too! Brian and I were worried because Annabelle had a date with Aubie at 2. So we came home changed into our orange and blue and decided to go see Aubie without a nap! And she did great! We were so proud of her! She enjoyed meeting Aubie,playing with friends,and supporting a great cause. Phi Mu hosted the event and all proceeds were donated the the Children's Miracle Network.

Annabelle loved Aubie! She made cute "growling" noises at him and even told Brian and I "bye-bye" when she was in his lap!

Garden in the Park

Annabelle and I went to "Garden in the Park" in Historic Opelika with our friends, Richard,Celeste,and Brooks this morning. The weather was great. Annabelle enjoyed watching all the people and the miniature train go round and round. And I enjoyed myself a sinful treat! This has to be the best sandwich I have ever had! It was served on fresh white bread with bacon, lettuce, and ranch then piled high with hot,thin,fried green tomatoes! I must say that the 30 minute wait in line was well worth it. I think that I will try to duplicate this recipe at home! I hope you all are having a great weekend! Enjoy the pictures-sorry I did not take one of the BEST sandwich ever!

Annabelle had a very busy week! She got her first TWO teeth, turned 8 months old, and celebrated her 1st Valentines Day. She has changed so much over the past 8 months! Brian and I are so blessed to have such a sweet, patient, loving, and happy baby!

Thanks to Nana for the cute valentine outfit! It made me very happy-as you can see! If you look close enough you can see her 2 bottom teeth in this picture.

Wow, I can not believe it is already Sunday night! The weekend goes by so fast! Being a working Mom, I enjoy the weekends now more than ever before! This weekend Brian's Father came down to Auburn to visit with us. We really enjoyed having him here. We spent most of the weekend playing with Annabelle-of course, eating great food, did a little shopping, and today we went to visit my parents in Ozark. Annabelle was able to be with both of her Papaws and 2 of her 3 great-grandfathers as well as her Nana and her great-granmeme. She is really so blessed to have so many grandparents that love her dearly! I do think that this may cause her to be just a bit spoiled-what do you think?
I was able to catch a great shot of Annabelle with her Nana,Papa, and cousin Blade. Blade and Annabelle are exactly 3 months apart. Blade will be 5 months old and Annabelle will be 8 months old on the 12th. As you can tell in the picture-Nana and Papa are very proud to have been blessed with a grandaughter and grandson this past year!

My First Blog

Okay, so I decided to take the plunge and start a blog. My goal is to use this blog to share special moments of our lives with family and friends. I am trying to figure out all this stuff, so just bare with me while I "practice".

Annabelle will be 8 months old on the 12th and she is the light of our lives! I absolutly love being a mommy. Time goes by so fast when you are having fun though! Annabelle has changed so much over the past 8 months it truly amazes me every day! She is trying her hardest to crawl right now. I really thought last weekend that she would be on the move by now, but she has not quite figured out how to move her knees and arms at the same time. However, she is still on the "move" as she uses her arms to pull her body wherever she wants to go. She loves playing in her room and I left her for a few minutes the other night and when I came back she was gone! Well, not really gone-but gone out of sight. She worked her way under the daybed that is in her room, I guess she wanted to play hide-and-seek! Below are a few pictures of our game!
